Quite possibly our favorite thing in the world right now...

Kale Chips
clean some garlic and shallot

chop 'em up


wash kale and pat dry / remove stem

roughly chop

add everything to a bowl + spices of your choosing (we recommend adding mustard seed to the mix), lightly coat with oil

mix

spread over cookie sheet

bake at 335 degrees for about 15-20 minutes, until golden brown (chips will go from soft to crispy - when they turn crispy, they're done!)

YUM!

Pizza Recipe

Dough (makes two)

heat one cup water
stir in 1 tbls oil, 1/2 tsp salt, 1 tsp sugar
cool to lukewarm, dissolve 1 pkge yeast
stir in 3 cups flour, one cup at a time
knead together....at this point either:
a. let rise 30 min, punch down and divide in half, roll out 1 half right away for pizza and put the other in fridge (oil outside of dough ball and loosely enclose in a bag or bowl - allow room to rise)
b. divide in half, oil both dough balls and loosely enclose in a bag or bowl with extra room for rise and immediately put in fridge - after 6+ hours each dough ball can be rolled out for pizza:

when you are ready to use the dough from the fridge or after the first rise, take out and allow to rest at room temp for 10-15 min or so, roll flat to shape your pizza (pizza round, cookie sheet, etc)....then add sauce, cheese, etc....bake 425 degrees for 20-25 min, until cheese is melted and starting to brown


Sauce

combine all ingredients
1 can (14.5oz) diced tomatoes, undrained,
1 can (6oz) tomato paste
1/3 cup water
1-1/2 tbls olive oil
2 tbls fresh basil (fresh preferred, dried alternatively)
2 tsp dried oregano
1 tsp minced garlic
1-1/2 tsp sugar

makes enough for two pizzas!
